Anyone who knows me knows how much I love yaki Imo (roasted sweet potato).
But I also love beni imo!!!!! (purple sweet potato).
On this particular day in Okinawa we managed to find 'yaki beni imo' roasted purple sweet potato......
It was amazing!!! :-)
