From time to time, I make this super easy crunchy vegetarian dish: it has lots of mushrooms (any kind), snow peas, chards (stalks and all), spinach, and zucchini. It could also have carrots, celery and red peppers!
I sauté the vegetables in olive oil, add salt and pepper, and a bit of lemon juice. Your vegetables are ready when they turn bright green. Serve with white rice. It’s delicious!
