Happy Wednesday, everyone! If you’re looking to elevate your morning routine and your next evening cheese board in one single move, you are in the right place. I’m cooking up a fresh batch of small-batch peach jam today, and the kitchen smells absolutely incredible.
This isn't your standard, overly sweet fruit spread. Thanks to a secret blend of warm spices, it pulls double duty as a sophisticated "cheese chutney" that pairs beautifully with a sharp cheddar or creamy goat cheese, while still being perfect on hot, buttered toast.
Here is exactly how I make it if you want to try it at home:
The Ingredients
- 4 fresh peaches (chopped)
- 1 small mug of sugar
- 1 large lemon (juice + some of the peel for that bright zest!)
- The Spice Blend: frac{1}{4} tsp cinnamon, frac{1}{2} tsp ginger, frac{1}{4} tsp anise, and frac{1}{4} tsp nutmeg.
The Method
- Mix & Melt: Mix the chopped peaches, sugar, spices, lemon juice, and peel together in your pan. Turn the stove to Number 4 and stir until the sugar completely dissolves and it just starts to simmer.
- Bring the Heat: Once simmering, turn the heat up to Number 5 until it gets beautifully active and bubbly.
- The Slow Simmer: As soon as it's bubbling, dial the heat back down to Number 4. Let it cook down and thicken for another 15 to 20 minutes.
And that’s it! You’re left with a gorgeous, aromatic, golden jam.
