What’s Cooking Today? Comforting French

Howard

Hello everyone!

As the weather cools down, there is nothing quite like a rich, hearty oven bake that fills the kitchen with incredible aromas while taking minimal effort to put together. Today, I want to share a fantastic cozy meal: French Onion & Mushroom Baked Chicken.

This recipe uses a clever combination of soups and seasoned chicken fillets over a bed of rice—it turns out rich, savory, and wonderfully comforting!

What You Need:

  • Chicken: 3 or 4 thin chicken fillets (pechugas de pollo—sliced fillets rather than full, thick chicken breasts)
  • Seasoning: 1 packet of French onion soup powder (or classic onion soup powder)
  • The Soup Base: 3 cans of soup (1 chicken, 1 leek & potato, and 1 mushroom)—or your own homemade white soup equivalents!
  • Rice: Cooked rice (boiled and rinsed off)

Easy Step-by-Step Method:

  1. Mix the Rice & Soups: In a mixing bowl, combine your cooked rice with all three cans of soup (chicken, leek & potato, and mushroom). Stir everything well so the rice absorbs all those delicious white soup flavors.
  2. Layer the Bottom: Pour half of your rice and soup mixture into the bottom of a large baking/oven dish and spread it evenly.
  3. Season the Chicken: Coat your thin chicken fillets directly in the dry French onion soup powder on both sides—making sure they get a good, generous crust of flavor!
  4. Assemble the Dish: Lay the seasoned chicken fillets on top of the rice bed. Then, pour the remaining half of the rice and soup mixture over the chicken, covering it completely.
  5. Bake: Cover and bake in a preheated oven at 180°C–200°C for about 45 minutes to 1 hour, until the chicken fillets are tender and cooked through and the rice base is bubbling and golden.
