Hi Cafetalk community. 

Happy New Year! It's year of the rat, which is very exciting! As you probably already know, I am American. However, my husband's family is from Czech. Each year they eat what is called the "cold kitchen" for lunch. They call it the "cold kitchen" because everything in it is cold. It includes folded meats wrapped around hard boiled eggs on a bed of potato salad. The potato salad has a mayonnaise base and is filled with vegetables such as sauerkraut and sweet peppers. You can garnish the dish with herbs and vegetables like sweet pickles and parsley if you want.

It is eaten by the Czech people to give them strength and energy for the new year ahead. Usually they drink sangria or champagne with this lunch appetizer. They typically make the "cold kitchen" the night before and refrigerate it so that when their friends and family are around on New Year's Day they can just take it out of the fridge and enjoy it together!
