トルコアイス-Dondurma

ドンドゥルマ（Dondurma、ドンドルマとも）は、トルコの氷菓。
トルコ語で「凍らせたもの」の意味で、トルコでは各種アイスクリーム、氷菓全般を指す。
一般的なアイスクリーム]]に似ているが、粘りがあることが特徴。日本国内ではトルコアイス（後述のトルコ風アイスとは異なる）とも呼ばれる。

その秘密はサーレップの球根

サーレップというのはラン科の植物の呼び名で、この植物の球根をつぶして得られる粉が食用に用いられる。
サーレップの粉は水または牛乳と混ぜてかき混ぜながら弱火で沸かすと粘り気が出る。

サーレップの球根を牛乳で溶いて、シナモンをふりかけた飲み物。
冬のトルコでは定番の飲み物。
とろっとした飲み物で、体がとても温まります。

日本で売ってるカップの「トルコ風アイス」はにせものだった？？

日本でトルコ風アイスと称した製品が出回っているが、その多くは原料、製法ともドンドゥルマとは全く違う製品である。
多くは、サーレップは使っておらず、海草などから抽出した増粘多糖類によって粘りをつけている。

OK, I'll try both of them someday! The Turk opened the shop there for many years ago and it became very famous and now the Turkish ice cream is one of the speciality of Insadong. We can enjoy the taste and also the performance like pictures you shared.

Hi Taehwan! This is our traditional ice cream which is quite different than ordinary ones. Sahlep is the root of the flower that has a nice smell and consistency.Also, it keeps the ice cream cool, longer than a normal ice cream.We use Sahlep in Turkish Ice Cream and preferably as a drink on Winter.I highly recommend you to try both of them.

Hello, Hirota. Many Korean people know Dondurma very well because there is a small and famous shop of it in the very popular tourist spot called Insadong where we can see many aspects of traditional Korean culture. But I didn't know it's sticky because of the salep ! I really wanna try to drink it !!
