Living in Thailand where there are only cool season, hot season and wet season, there is no spring. In England where I come from Spring suggests flowers, such as daffodils, tulips and bluebells, but not so much, foods. In Japan, Sakura brings cherry blossoms but I don't know about spring foods there.

Spring foods in the UK are very few and far between, because supermarkets have foods from all over the world, and because it's always spring somewhere in the world, it means we can eat traditional spring fruits, such as, strawberies, blueberries or rhubarb, whenever we want them.  

In Thailand, this time of year we have just had Songkran, which is Thai New Year and usually means throwing water on people, because it's so hot, but not this year thanks to Covid 19. Food here doesn't change much through the year. It has five flavours, these are salty, sweet, spicy, sour and creamy and Thais are happiest if they can combine all five.
