It’s soup season! I do eat soup all year round, but I especially like to have a hot bowl of soup in the colder days of autumn and winter. It’s so warming! I don’t usually follow a recipe when I make soup. I like to use whatever leafy greens I have on hand like kale, beet greens, or spinach. I like to add vegetables like onions, tomatoes, carrots, potatoes, and squash. Beans or lentils help make a soup complete. Seasonings though are, perhaps, for me the most important ingredient in a soup.
I like many different seasonings and flavours. Do you have a favourite seasoning or vegetable you like to have in soup? I don’t have a favourite vegetable. In fact, there are some vegetables I don’t like but I eat them because I know they are good for me. Confession: I don’t like winter squash. I enjoy summer squash, especially zucchini (known as courgettes in the United Kingdom), but I actively dislike the taste of winter squash. However, if I put squash in soup, and add enough cumin and garlic, it can be delicious.
